  • Introducing Mini Mochi Donuts! 🍩 We’re excited to share that Mochi Foods has partnered with Belshaw Adamatic Bakery Group on their newest automated donut machine — now designed to make mini mochi donuts using the Mochi Foods US mix. This system uses a custom submerger and Belshaw’s state-of-the-art equipment to produce consistent, high-quality mini mochi donuts with minimal labor. After a year of development and testing, the first units are officially shipping out. It’s a meaningful step forward for shops looking to add mochi donuts without the labor or training challenges.     From donuts to data: Dawn shows how to bake trends into growth At IBIE 2025, Dawn Foods Global turned its booth into a live lab – 5,000 #donuts a day, chefs piping buttercream onto cakes, and marketers walking operators through its new North America #BakeryTrends report. Theatrics aside, the Michigan-based company was making a point: indulgence, nostalgia and inclusivity can still drive growth, even in a market hit by #laborshortages and volatile #ingredientcosts. Chef Melissa Trimmer, CEPC, AAC called bakery “an affordable way for consumers to treat themselves.” R&D leader Tim Tomczyk stressed speed as the real currency, with ‘just add water’ mixes and ready-to-use buttercreams freeing up decorators to focus on creativity.   • It’s been a week since the world’s largest baking expo wrapped (International Baking Industry Exposition (IBIE)), and one thing is clear — new flavors and textures are shaping the future of baked goods. 🙌 🔥 Here's what we learned: 💜 Purple Sweet Potato is in demand — everyone’s excited about its vibrant color and authentic, earthy-sweet flavor. Our Purple Sweet Potato Mix was one of the most talked-about products at our booth. 🍡 Mochi in pastries is here to stay — from mochi muffins to mochi butter cake, people are looking for chewy, creative twists in their baked goods. We’re glad to support this with our Instant Mochi mix and our line of gluten-free, easy to use mochi baking mixes. 🥇 Texture wins — customers told us over and over that chewy and fluffy products are what make them stand out. That’s exactly what we’re here to deliver in each of our SKU's. After 4 days on the floor, one thing was clear: our partners want products that help them innovate, excite their customers, and WIN.     This Launch Almost Didn’t Happen… Three weeks ago, we got the green light to launch our first-ever Ube Mochi Pancake & Waffle Mix in all Las Vegas Costco Wholesale. The problem was, we didn't have any product. That meant just 21 days to: 🛠 Design and print brand-new club bags 🌾 Source and prepare ingredients 📦 Build, ship, and prepare pallets At times, it felt impossible. The deadlines were crazy tight, and the pressure to hit the date was nonstop. But here’s the thing I learned — when everything feels overwhelming, you lean on two things: your team and the ability to stay flexible. Last week, seeing those purple bags stacked high knowing we pulled this off together, was one of the proudest moments of my career. From idea to shelves in 3 weeks. Proof that with the right people beside you — and the flexibility to pivot when things don’t go as planned — even the toughest deadlines can turn into milestones.
