Schwartz Brothers Restaurants, a privately held partnership headquartered in Bellevue, was founded in 1970 by Bill and John Schwartz. Bill's son Daniel became President and CEO in 2020. From the October 1970 opening of The Butcher Restaurant in Bellevue to today, the focus of Schwartz Brothers Restaurants has been to provide our guests with an exceptional dining experience each and every time they visit us. Schwartz Brothers Restaurants currently owns and operates a number of full-service restaurants and food service businesses in the Pacific Northwest.
